Fried Eggs Instead of Boiled

We really appreciated having boiled eggs in the cooler for meals or quick snacks but something happened to my egg cooker and instead of boiling them or getting another cooker, I decided to fry some up and see what they were like the next day.  They were awesome and much faster and easier than hard boiled!

I made them in my sandwich cooker and can do 6 at a time.  When they're done I cool them off by the fan and they store in the cooler for a few days. They take up a lot less room than boiled also:-) 

(Those of you in van life may have already seen the napkin leveler under the right side of the cooker because we were parked at a slant, which is common  out here on the road:-)
