Here's a simple recipe from my old blog from when we used to live on a homestead. We love healthy foods and rice is on the top of that list with lentils as a close runner up. Dry goods are such a blessing to have and cooking with them is so simple and inexpensive! This recipe has no meat but it would be great with canned venison mixed in! (Or chicken, hamburger...whatever is your choice.) This is one of those easy that you toss in the oven with whatever else you are cooking...like squash? So on to the recipe: 1/2 cup brown rice 1/2 cup lentils 1/4 cup onion, diced 1/4 cup carrots, diced (optional) 1 garlic clove chopped 1 3/4 cup broth 1 tablespoon oil or butter 1/4 teaspoon salt 1 teaspoon cumin (Any seasonings you like) Spread the rice, lentils, onion, carrots and garlic on the bottom of a baking dish. Bring the broth, oil and seasonings to a boil and pour over the rice/lentils. Cover and bake at 375 degrees for 45-1 hr until done. I don't know how many servings it makes but it's enough to feed 2 people (one being a man) and have some left overs for tomorrows soup:-)
Eating from dry goods is not only very healthy, it's also super economical and stores great for long periods of time so stock up! Comments are closed.
