Here's a very simple Mediterranean salad you might like. I don't have measurements so I'll just share what I did and you can do the same, adapting it to your liking. Ingredients: * Kale (chopped, cut or torn into small pieces) * Cooked pasta * Sun dried tomatoes (I found a buy one get one free:-) * Oil (I used canola but olive or any oil you like) * Vinegar (I like ACV) * Parmesan (I used shredded and the sprinkle kind) Toss the kale, pasta and some sundried tomatoes together. Pour over a lot of oil (you want it well coated) a splash of vinegar and whatever spices you like. Let sit in a cool place (fridge or cooler) for a couple hours at least and then serve with a generous sprinkle of parmesan.
Some people use feta cheese (which makes it even better) but I didn't find any on sale:-) I'm sure you could use fresh tomatoes instead of sundried but they give it a very rich, distinct flavor. (I made my right in a big ziploc type bag because I use a cooler and it's easier to store and less clean up from the oil as well.)
