Tostadas are easy to make and you can use any kinds of toppings you like. This one is with refried beans which makes it really easy, fast and inexpensive to make. They remind me of a big round tortilla chip:) Those are the ingredients I used because I had it all on hand. (Refried beans, cheese, broccoli slaw, salsa and yellow peppers.) I spread refried beans on them, topped with cheese and microwaved one minute each. Then I added salsa, broccoli slaw and some peppers we found at a discount produce stand. I've made various versions of them with ground turkey or beef as the base and then topping with tomatoes instead of salsa and using cabbage for the crunchy greens, sour cream is a nice addition if you have it. We've also had them with just cheese (cook 30 seconds to melt it) and salsa. The options are endless. Whatever you have and whatever your family eats will work. Yep, they can be messy to eat but you just scoop up the remains and give thanks for all good things the Lord provides:-) Comments are closed.
