Gracias Padre por la comida! Here's a simple and delicious recipe you might enjoy. Ingredients: * Summer Squash (yellow or zucchini) * Tuna * Cheese * Mayo / mustard * Seasonings (I used salt and dried chopped onions) (See the slideshow for simple instructions and notes at the bottom.) This is just a base recipe to give you an idea and you can adjust it to your liking. *I let my squash sit with salt for about 20 minutes, you can skip that part if you want or let it sit longer. * You don't have to add mayo or mustard but it gives it moisture. Use sour cream or yogurt instead if you like. * Some people like to hollow out the insides and chop that part up, adding it back to the tuna mix but I like to just put it all on top as it's quicker but both ways are good. * Cooking temp and time are general, adjust to your liking. (Some people might want a more firm squash and some might want it cooked more.) About 30 minutes for a thick slab was perfect for picking up and eating like a boat as it was firm enough to hold together but soft enough to easily bite and be fully cooked. * There are so many variations you can do, using up what you already have in your home. I found these squash discounted and they were a bit soft and had some bad spots that I cut off and they turned out just fine. The tuna was from discount also.
