Here's a simple Mediterranean pasta salad I make that you might enjoy also. Sorry, I don't use measurements on salads but you can adapt it however you want. INGREDIENTS: * Cooked pasta * Tomatoes * Red/yellow/orange pepper * Cucumber * Onion * Can of beans (I like either white or garbanzo) Chop veggies, add drained beans and mix.
Toss with Italian dressing. I didn't have any Italian dressing for this one so I improvised by drizzling olive oil (couple tablespoons) and a/c vinegar (couple teaspoons) and some tomato/basil seasoning with salt. I like to top it on the plate with some parmesan cheese and you can add some sunflower seeds too. (I add sunflower seeds to almost all my salads :-) Praise God for healthy, simple foods for van life (and regular house life:-). I thought I'd share a little bit about apple cider vinegar, how we use it and then you can do more research and see many other uses for it. I found the two small bottles for $1.25 so for $2.50 I filled my glass bottle (that I'd originally found discounted) that normally runs an ave of $5 or more.
Brother Tupos and I make a daily vinegar drink with vitamin c and magnesium, which is the main reason I buy it and the other reason would be that I use it as a conditioner for my hair. It's super simple to do! After you wash your hair and rinse it, you just put a couple tablespoons of vinegar in a cup and fill it with water and pour it over your head. I wait about one minute then rinse it out. It doesn't smell like vinegar and your hair has a light softness to it. Nope it's not like the fancy store bought conditioners but what do we need that for as our hair is covered all day. It's super frugal (pennies per rinse) and it's great for van life because it rinses out with minimal water, contrary to regular conditioner which uses a lot of water and is not good for van life. I'm thankful for such simple things that the Lord provides. Sister Aman Here's a quick post on how to cover a logo on clothing. A brother bought this vest at a thrift store and I hand sewed a patch to cover the logo for him. I didn't have any darker fabric but that's okay, it's just clothing to cover us and we don't get wrapped up in looks. Praise God for warm clothing at affordable prices and the ability to modify them to be biblical. We saw a beggar on the corner and gave her the gospel and a little food bag. We parked for the night and the next morning she was parked by us. We watched her walk into the gas station and buy a pack of cigarettes and it made me think of how much food we can buy instead of a pack of cigarettes. (I figured about $6) Maybe this will give someone some simple ideas (that are easy for car camping, van life, rv life or in a house...and also be an encouragement to be frugal with the Lord's money. The pricing I used was from Walmart and if you shopped sales you could find things a bit cheaper. My point is, a person can eat very simple (not complicated to cook) and healthy and affordable.
