Here's a simple Mediterranean pasta salad I make that you might enjoy also. Sorry, I don't use measurements on salads but you can adapt it however you want. INGREDIENTS: * Cooked pasta * Tomatoes * Red/yellow/orange pepper * Cucumber * Onion * Can of beans (I like either white or garbanzo) Chop veggies, add drained beans and mix.
Toss with Italian dressing. I didn't have any Italian dressing for this one so I improvised by drizzling olive oil (couple tablespoons) and a/c vinegar (couple teaspoons) and some tomato/basil seasoning with salt. I like to top it on the plate with some parmesan cheese and you can add some sunflower seeds too. (I add sunflower seeds to almost all my salads :-) Praise God for healthy, simple foods for van life (and regular house life:-). Comments are closed.
