Here's a simple recipe for van life that I use a lot. We call it waffle bread (cuz you make it in a waffle maker) and on the internet it's called 'chaffle'. You can go look it up and see all the different ways you can make it but I'm only interested in the simple basic way. I'll share at the end of the post, the way I use them. Ingredients * 1 Egg * 2 Tablespoons Almond Flour * 1/8-1/4 Teaspoon Baking Powder * 1 Tablespoon Sour cream, or plain yogurt or mayo How to make them. * Heat the waffle maker. * Mix ingredients. * Spray the waffle maker with oil * Pour in half the mixture * Cook 3 minutes * Cool and store in the refrigerator for about 3 days I don't exactly measure the sour cream or the baking powder because it doesn't have to be perfect but I do measure the almond flour. Don't worry about the sour cream (or whatever you use) lumping up a bit because if you wisk it good and let it sit while the other waffle bread is cooking, you can mix it one more time before pouring and it'll be blended right in. (Some people use blenders but it works perfectly fine for me by hand.) I do them by one little batch at a time because it's easier for me in van life to mix in a little container and to know how much to measure out for each pour but I'm sure you could mix a bunch of it up and do it that way. I bought a little tiny waffle maker that doesn't pull on the generator much, in fact I might grab another one if I find one at a thrift store so I can have 2 going at once. You could make bigger batches and use a bigger waffle maker if you wanted. I tried doing them without spraying the waffle maker but this is what happened. You can eat these like pancakes (we like them with butter and molasses) but we mostly use them like bread for peanut butter and jam sandwiches, for burgers or lunch meat / cheese sandwiches and they wrap around a hotdog really well too. They are high in protein, super easy to digest and some people use them for specific diets but I'll let you do all your research on it for yourself. Note: of course it's not going to be like real bread...it's a substitute for that and it may be one of those things that you either like it or not. We like them and maybe you will too.
Here are just a few thoughts about eggs in van life because living out of a cooler is different than having a refrigerator / freezer. We have a big cooler but I still find it hard to store a dozen eggs in it without it taking up too much room and an egg or two getting smashed, so I like the 6 packs. Sometimes they cost as much per egg as the dozen and sometimes they cost more so I buy accordingly. I saved one of the styrofoam packs so when I buy a dozen, I cook up 6 right away and store the other 6. Oftentimes I find eggs for a good deal in cardboard and that doesn't last in the cooler so that's why I like to always have a 6 pack styrofoam on hand. Cooling eggs before putting them in the cooler. Sharing simple van life tips as we go:-) Updated: June 2024 Editing to add that after doing both ways (peeled and unpeeled) I prefer to peel the corn, put it on a plate, lay a napkin over it and spray it with water. Cook 4 minutes and it's done. The reason I like that way is because then I don't burn my hands peeling it afterwards:-) You do get more of an earthy husky taste leaving the husky on but both are good ways. We really appreciated having boiled eggs in the cooler for meals or quick snacks but something happened to my egg cooker and instead of boiling them or getting another cooker, I decided to fry some up and see what they were like the next day. They were awesome and much faster and easier than hard boiled! I made them in my sandwich cooker and can do 6 at a time. When they're done I cool them off by the fan and they store in the cooler for a few days. They take up a lot less room than boiled also:-) (Those of you in van life may have already seen the napkin leveler under the right side of the cooker because we were parked at a slant, which is common out here on the road:-) Hopefully that's a help to some of you:-)
